Either there is a method called getVelocity() or you measure the time the entity needs to travel from vector A to vector B and calculate the velocity that way.
You can get the projectile speed the same way.

Indeed, you could measure the time between the projectile is being launched and the time it stops, for example in starfall you have a hook named EntityTakeDamage so you could use it in a way your projectile stops a timer when it hits the prop.
